• 1 cup whole grain flour (spelt, kamut etc.)
  • 1 tbsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 2 eggs OR 3 egg whites
  • 1/3 cup organic sugar (sucanat, agave, maple etc)
  • 1/4 cup flax or hemp oil
  • 1/2 cup walnuts, chopped
  • 1 cup carrots, grated
  • 1 cup zucchini grated

1.Preheat oven to 350F.

2.Line 6 muffin cups with paper or grease and flour a loaf pan.

3.Blend together flour, baking powder, baking soda and cinnamon. Make a well in the center and add the eggs, oil and sugar.

4.Beat the liquid ingredients and begin to slowly incorporate the dry ingredients.

5.Add the carrots and zucchini until all ingredients are well combined.

6.Fold in walnuts.

7.Spoon into prepared baking pans.

8.Bake 30 minutes or until cooked through.
