1-2 garlic cloves
1 small onion, thinly sliced
1/2 tsp. braggs liquid soy
2 cups mushrooms, chopped (i used portobello mushrooms)
1/4 cup fresh parsley, chopped
4 cups vegetable broth (divided)
1/4 cup wild rice
1/4 cup quinoa
Salt and pepper to taste
In a pot bring 1/4 cup broth, onions AND garlic to simmer until fragrant. Add in braggs soy seasoning, mushrooms, parsley, remaining broth and wild rice. Bring to a boil and simmer 30 minutes.
Add quinoa and simmer for an additional 15 minutes.
Remove from heat and let sit 10 minutes before serving.
Season with salt and pepper if needed.
