Making homemade gnocchi is incredibly easy and only requires 3 ingredients.
INGREDIENTS
1 LB. sweet potato
2 cups gluten free flour (i used equal parts tapioca, sorghum and brown rice flours)
1/2 tsp. sea salt
DIRECTIONS
Peel and chop sweet potato. Chop into 3 or 4 pieces and steam until cooked.
Remove from heat and cool until warm.
Once cooled, mash and set aside.
Place flour and salt on your work surface.
Make a well in the centre and add in the sweet potato.
With a fork, or hands, mix together until you get a smooth dough. Add in additional flour as needed until dough no longer sticks to the work surface. If you are unsure if you have used enough flour, you can take a ball of dough and boil it for a few minutes. If the gnocchi holds it’s shape then you are done adding flour.
Divide the dough into smaller sections to make it easier to work with.
Roll out one section into a log and cut into 1/2″ pieces.
With your thumb on the piece of dough, gently slide the gnocchi down the tines of the fork.
Transfer to a parchment lined baking tray.
Once you have finished they are ready to be cooked.
You can also freeze the tray of gnocchi. Once frozen transfer to a freezer bag. Can be frozen for 2-3 months.
To cook the gnocchi, bring a large pot of salted water to a boil. Add half the gnocchi to the pot and let it cook for about 4-5 minutes, or until the gnocchi float to the top and have cooked an additional minute at the top. Remove the cooked gnocchi with a slotted spoon and then cook the second batch of gnocchi.
Serve with your favorite sauce and serve.
