INGREDIENTS
1 cup dates, soaked
1/2 cup goji berries, soaked
1 1/2 cups of nuts or seeds (almonds, walnuts, pecans, sunflower seeds etc.)
3/4 cup of shredded coconut, unsweetened – divided
1/4 cup cocoa nibs
1 tbsp. cocoa powder
DIRECTIONS
Strain dates and goji berries and set aside.
In a food processor, add nuts or seeds, 1/2 cup coconut (reserve 1/4 cup for later) and cocoa nibs.
Process until fine.
Add dates and goji berries and process again until all ingredients come together.
Roll the mixture into bite size balls then coat in reserved coconut.
