A hearty slow cooker meal that is simple to make and satisfying on an autumn day.
this recipe comes from my Pumpkin Cookbook
1 onion, chopped
1 clove garlic, minced
1 cup chopped carrots
1 cup chopped celery
1 sweet potato, peeled and cubed (approx. 2 cups)
1/2 cup dry red lentils
5 cups vegetable broth
1 tsp. cumin
1/4 tsp. pumpkin pie spice (more or less to taste)
2 cups pumpkin puree
Place all ingredients in slow cooker.
Cover and set on low for 4-6 hours.
Cool slightly and serve as is, or puree
