Roasting tomatoes brings out their natural sweetness and depth of flavor, making them perfect for a rich and creamy puree., perfect for pasta, pizza topping or dipping!

Customize the vegetables to your liking, but here’s a suggested combination:

  • Ripe tomatoes, cored and halved (any variety)
  • garlic cloves
  • red bell peppers
  • onions
  • olive oil or avocado oil
  • fresh basil
  • fresh parsley
    Salt and pepper, to taste

    Instructions:
  • Preheat your oven to 425°F (220°C).
  • Toss the mixed vegetables with olive oil, salt, and pepper on a large baking sheet.
  • Roast for 45-60 minutes, or until all the vegetables are tender.
  • Remove the vegetables from the oven and let them cool slightly.
  • Transfer the roasted vegetables and the juices to a food processor for a thin sauce and blend until smooth.
  • If you prefer a thicker sauce, do not add all of the juices.
  • Taste and adjust the seasoning as needed.
  • OPTIONAL – if you want to avoid a thinner sauce without all the fiber, just press through a sieve.

Store it in an airtight container in the refrigerator for up to 5 days or freeze for up to 6 months.
