½ (400g) package vermicelli brown rice noodles
1 tsp. Bragg All Purpose Seasoning
.Almond Dipping Sauce
2 tbsp. almond butter
1 tbsp. Bragg All Purpose Seasoning
2 tbsp. water
1 package rice paper wrappers
½ cup chopped cilantro, mint or parsley
In a large pot, bring 3 cups of boiling water along with 1 teaspoon
Bragg All Purpose Seasoning to a boil. Add noodles and cook
approximately three minutes or until softened. Drain and set aside.
Meanwhile, prepare dipping sauce. Whisk ingredients together in a
small bowl. Continue to whisk until the mixture resembles a smooth
paste. Set aside.
Assemble the rolls. In a large bowl of warm water, soak a rice paper
wrapper for 30 seconds or until soft. Remove wrapper to a paper
towel to absorb excess water.
About one-third from the bottom of the wrapper, lay one forkful of
rice noodles, a pinch of cilantro, and choice of filling. Fold the
bottom of the rice paper wrapper over the vegetables. Tuck in the
sides and roll into a cigar shape. Repeat with remaining rice paper
Serve with almond dipping sauce.
