2 1/2 cups walnuts, divided
1 1/2 cup dates (soak them if needed)
1/4 cup raw cacao powder
1 tsp. vanilla extract
Frosting (optional)
1/4 cup raw agave syrup or liquid sweetener of your choice
1/2 cup coconut butter (not oil)
1/4 cup. coconut flour
1 tsp. vanilla extract
Strain dates and reserve liquid**.
In a food processor, process walnuts until ground.
Add dates, cocoa powder and vanilla. Process until it forms a ball. Use reserved date liquid if needed.
Press into parchment lined loaf pan.
If using frosting, prepare icing by adding maple syrup, coconut butter, vanilla and flour in a small food processor and process until smooth.
Spread overtop brownies and chill until firm.
