A wonderful dish that can be served both warm or chilled.

¾ cup quinoa
1 tbsp. extra virgin olive oil
1 onion, chopped
1 garlic clove, minced
1 ½ cups vegetable broth
½ tsp. cumin
⅛ tsp. cayenne pepper
½ cup fresh or frozen organic corn
1 carrot, peeled and diced
1 (15oz.) can black beans, rinsed and drained
½ cup prepared salsa
sea salt and pepper to taste
Parsley or cilantro, chopped
Avocado

Soak quinoa in water for 5 minutes, drain and rinse.

Heat oil in a large frying pan with onion and garlic. Cook until fragrant and onions have softened.

Add broth and quinoa and bring to a boil. Reduce heat and simmer 10 minutes.

Add cumin, cayenne, corn, carrot, black beans and salsa. Simmer an additional 5-10 minutes until all liquid has been absorbed.

Taste and season with salt and pepper to taste.

Serve garnished with freshly chopped cilantro, parsley and avocados.
