I found this pasta at Costco, but any gluten free pasta will do for this recipe.

Quinoa Pasta & Greens
1/2 cup quinoa pasta per person
2-3 cups baby greens per person
2-3 tsp. extra virgin olive oil
1-2 cloves garlic, crushed or chopped
salt and pepper to taste

Cook pasta according to package directions.
Steam baby greens just until wilted
In a skillet, heat olive oil and garlic over low heat until garlic is fragrant.
Add cooked pasta and steamed greens.
Mix to combine all ingredients and serve.
