Oatmeal cookies are a classic comfort food and high-fibre snack.
1 ¾ cups old fashioned oats, (not instant) divided
Pinch of sea salt
½ tsp. baking soda
1 tsp. cinnamon
⅓ cup coconut oil, softened
¼ cup maple syrup or sweetener of your choice
1 tsp. vanilla extract
¼ cup shredded unsweetened coconut
⅓ cup vegan chocolate chips
½ cup walnuts, chopped (optional)
Preheat oven to 350°F.
Line a small baking sheet with parchment paper.
In a food processor, process oats, sea salt, baking soda and cinnamon into a flour and set aside.
In a large bowl, cream together coconut oil, maple syrup and vanilla.
Add oat flour and remaining ¾ cup oats, coconut, chocolate chips and walnuts. Mix until all ingredients are combined. Scoop batter, ¼ cup at a time, on to prepared baking sheet and flatten to ½-inch thickness.
Bake 18-20 minutes.
Cool completely.
