You can buy oat flour premade, or you can easily make homemade oat flour by pulsing the oats in a food processor or high speed blender.

INGREDIENTS

2 cups oat flour

2 tbsp. coconut sugar (or sweetener of your choice)

2 tsp. baking powder

1 tbsp. ground chia seeds

1 tsp. cinnamon

1 1/4 cups dairy free milk

1/3 cup unsweetened applesauce

1 tsp. vanilla extract

DIRECTIONS

Preheat waffle iron. (I used a silicon waffle mold that i got from Epicure, but i don’t think they sell it anymore but I added a link to a similar one below)

In a large bowl combine flour, sugar, baking powder, chia and cinnamon. Mix to combine.

Make a well in the centre and add milk, applesauce and vanilla.

Whisk to combine all ingredients.

Prepare waffles according to waffle iron direction.

Serve with maple syrup and your favorite toppings!

IF using silicon waffle mold – Pour mixture into waffle molds and place in a preheated 375F oven. Bake 20-25 minutes.
