Quick and easy to make, this recipe is great for those busy days!

INGREDIENTS

1/4 cup raw green lentils, soaked

1 tbsp. olive oil

1 onion, chopped

1 carrot, shredded

1 zucchini, shredded

1/2 cup caulflower rice (shredded cauliflower)

1 cup organic salsa

1/2 tsp. cumin

1 tsp. chili powder (more or less to taste)

1/2 cup walnuts

1/4 cup hemp seeds

DIRECTIONS

Cook lentils in 2 cups of water for 20 minutes. Strain and set aside.

Meanwhile, in a saute pan, heat oil and cook onion until fragrant. Add carrots, zucchini, cauliflower, salsa and spices. Cover and bring to a simmer over low heat. Simmer 15 minutes.

In a food processor, process walnuts until course and crumbly.

Add to saute pan along with lentils and hemp seeds. Cover and cook and additional 5 minutes.

Serve overtop your favorite corn ships, taco shells, corn tortillas etc.

Top with your favorite toppings (diced tomatoes, vegan cheese, chopped green onions, olives, guacamole etc. )
