Ripe Jackfruit

Jackfruit is such an interesting fruit.  When ripe,  the aroma is amazing and the taste is like a combination of pineapple, banana and papaya.   If you are lucky enough to find in the grocery store, you must try it.

Baked Jackfruit Seeds

The seeds are also edible.  To roast them, preheat oven to 400F. Remove the slim membrane that covers each seed.  Roast in the oven for 20 minutes at 400F.  Taste wise, i found that once baked, they have the texture and taste of a potato.

 

Canned Jackfruit

Having said all that, the jackfruit we are using in this recipe is the UNRIPE version in water or brine.  (NOT the one in syrup).  Look for it at your health food, asian grocery stores or even Amazon.

Drain and rinse the jackfruit, then cut  into smaller pieces so that the marinade can penetrate evenly.

 

JACKFRUIT TACOS

1 can of Jackfruit in water, drained and rinsed well
1 Tbsp avocado oil
1 tsp smoked paprika
1 tsp chili powder
1/2 tsp. cumin
1 tbsp coconut aminos (or 2 tsp. gluten free soy sauce)
½ – 1 cup vegetable broth
1 small onion, finely sliced
1 clove garlic, minced
1 cup cooked quinoa – optional
Soft Corn Tortillas – i used wholefoods brand
Organic corn, cooked and cooled
Shredded lettuce
Tomato, chopped
Avocado, chopped

Cashew Cream
½ cup raw cashews, soaked and rinsed well
2-3 tbsp cup water
¼ tsp salt
1 tsp apple cider vinegar
½ -1 lime juiced, to taste

Directions
In a bowl add oil, paprika, chili powder, cumin, coconut aminos, and 1/4 cup of broth.  Add jackfruit and mix well.  Marinade for several hours or overnight in the fridge.

Heat oil in a medium pot and saute onion and garlic until fragrant.
Add jackfruit mixture and 1/2 cup vegetable broth.
Cover and bring to a simmer for about 25-30 mins.  With a fork shred the large pieces of jackfruit.
Remove cover and add cooked quinoa if using. Cover and continue to cook on low until all the liquid has been absorbed.

Meanwhile prepare cashew cream by placing all ingredients in a high speed blender and process until smooth.
Slowly add more lime juice to taste, and water until desired consistency is reached.

Warm soft tortilla until pliable.

Build Your Jack fruit tacos, and serve with a wedge of lime for garnish.
