Hemp seeds provide a healthy dose of protein, omega fatty acids, fiber, antioxidants and minerals. Enjoy them straight out of the bag, or add them to your favorite salad or in this case, pancakes !

Hemp Pancakes (vegan / gluten free)
1 1/4 cup prepared hemp milk  or homemade*
1 tsp. apple cider vinegar
3/4 cup buckwheat flour
1/2 tbsp. baking powder
1 tsp. vanilla extract
1/2 tbsp. avocado or coconut oil
1 tbsp. raw agave syrup or sweetener of choice

*homemade hemp milk –  in a blender add 1 1/4 cup water and 1/4 cup hemp seeds and process until smooth.  (do not strain)

Add apple cider vinegar to hemp milk and set aside for 5 minutes.

In a large bowl add buckwheat flour and baking powder.
Make a well in the center and add hemp milk (including the hemp pulp), vanilla, oil and sweetener.
Whisk until well combined.

Heat a non-stick skillet and grease with coconut oil.
Add 1/4 cup of batter to skillet and cook  until bottoms are browned ( mine took almost 3 minutes)
Flip and cook the other side.

Transfer to warming plate and continue with remaining batter.

Tip: Make a double batch and freeze any leftover pancakes

Serves 2 to 4
