These delicious gluten-free, vegan Chocolate Chip Cookies are soft and chewy on the inside and slightly crisp on the outside.
INGREDIENTS
1 1/2 cups almond flour
1/4 cup tapioca flour
1 tsp. baking powder
1/3 cup maple syrup
2 tsp. vanilla
1/4 cup vegan chocolate chips
DIRECTIONS
Preheat oven to 350F.
in a bowl add flour, tapioca flour and baking powder. Stir to combine.
Add maple syrup and vanilla.
Using your hands or back of the fork, press down on the ingredients until all the flour has be moistened.
Transfer to a work surface and knead the dough until you have a soft, smooth dough.
Add in chocolate chips and knead to incorporate.
Roll out into a log and divide into 16 sections.
Roll each section into a ball and place on prepared baking sheet.
Bake 15 minutes.
Cool completely before serving
