2 1/2 cups almond flour

1/2 cup coconut sugar or sugar of your choice

2 tsp. baking powder

1/4 tsp. baking soda

1 tsp. cinnamon

2 ripe bananas, mashed

1/3 cup dairy-free yogurt

1 tsp. vanilla extract

1/2 cup chopped walnuts (optional)

Pre-heat oven to 350F

Grease a loaf pan.

In a large bowl add flour, sugar, baking powder, baking soda and cinnamon.

Stir to combine.

Make a well in the centre and add in bananas, yogurt and vanilla.

Stir with a wooden spoon or spatula until all ingredients are well combined. The batter will look slightly lumpy compared to a regular batter.

Add in walnuts if using and stir again to combine.

Pour into prepared loaf pan.

Bake 50 minutes or until toothpick inserted in centre comes out dry.

Cool completely before serving.

Store at room temperature for 1-2 days.
