What you will need
1 pie crust recipe
1 tbsp. olive oil
1 onion, chopped
4 cups of fresh or frozen veggies – ( zucchini, mushrooms, carrots, peas, corn, cauliflower etc. )
1/4 cup vegetable broth
1 tbsp. braggs soy seasoning or coconut aminos
1/2 cup canned coconut milk—lite or full fat
1 tbsp. tapioca flour
4 Individual pie tins or ramekins
