This gluten-free, vegan meatball recipe is perfect with your favorite pasta dish!
These recipes come from page 58 of my Gluten-Free, Egg-Free, Dairy-Free Cookbook
1 flax egg (1 tbsp. ground flax soaked in 3 tbsp. hot water)
1-2 tbsp. extra virgin olive oil
½ onion, chopped
2 cups chopped mushrooms (approx. ½ lb.)
¼ tsp. sea salt
½ cup walnuts or nut/seed of your choice
½ cup gluten-free bread crumbs (i will be using gluten free crackers that i processed in a food processor or blender)
¼ cup chopped parsley
1 garlic clove, minced
½ lb. gluten-free spaghetti or pasta of your choice
