Cooking Class - Shepherd's Pie

Join me for a live and interactive online class. Our relaxed and informal cooking classes are held on Zoom and includes the opportunity to ask questions. This vegan version of shepherd’s pie will satisfy any cravings for that warming winter classic and features protein rich lentils and topped with sweet potato.

Ingredient List (page 45 of Gluten-Free, Dairy-free, Egg-Free Cookbook)
3 large sweet potatoes, peeled
⅓ cup green lentils (approx. 1 cup cooked lentils)
1 tbsp. extra virgin olive oil
1 onion, finely chopped
1 garlic clove, minced
¼ cup vegetable broth
1 cup chopped vegetables (carrots, celery, zucchini, etc.)
½ cup fresh or frozen peas
½ cup fresh or frozen organic corn
1 tbsp. vegan Worcestershire sauce
½ tbsp. Bragg liquid soy seasoning
Sea salt and pepper
