This gluten-free, vegan soup is creamy and delicious! We will also be making gluten-free,vegan breadsticks.
Soup Ingredient List (page 58 of Gluten-Free, Plant-Based Cookbook)
1 fennel bulb, chopped (approx. 2 cups)
2 tbsp. extra virgin olive oil
1 onion, chopped
2 cups vegetable broth
1 cup cauliflower, chopped
1 cup jicama root, peeled and chopped (or substitute with potato)
Sea salt and white pepper to taste

1¼ cup rice milk
1 tbsp. coconut sugar
1 tbsp. instant yeast
2 cups gluten free flour
2 tsp. guar gum
2 tsp. anise seeds
