A great gift idea

  • 1/2 cup coconut oil, softened
  • 1/2 cup sucanat or coconut Sugar
  • 1 Egg or egg substitute
  • 1 1/4 cups spelt flour
  • 1/8th tsp. Baking Soda
  • 1 tsp. baking powder
  • 2 oz. 85% Dark chocolate
  • Lollipop sticks (optional)

Preheat oven to 350ºF. Line baking sheet with parchment paper.

Cream sugar and butter. Add egg and mix well. Stir in flour, baking powder and baking soda. Mix well with mixer. Place dough in refrigerator for 1/2 hour before continuing.

Divide dough in half and roll each half out to 1/4″ thickness on lightly floured board. Cut into favourite shapes and place on parchment paper. (lollipop sticks can be inserted here )

Bake for 8 –10 minutes or until golden. Let cool 3 to 4 minutes before removing from baking sheet.

Break chocolate into pieces and heat over a double boiler until it begins to melt. Remove from heat and stir until the remaining chocolate melts. Pour into a piping bag.

When cookies have cooled completely decorate with dark chocolate.

Let chocolate dry completely before serving.

To make a bouquet, place cookies with sticks into a decorative container that has been filled with rice krispies treats or something firm enough to keep the cookies standing.
