¾ cup unsweetened coconut flakes, divided
16 medjool dates*, pitted
16 pecan halves

Set aside ¼ cup coconut flakes for garnish.

In a food processor, combine ½ cup coconut and dates.

Process several minutes until smooth and gathers into a ball. With your hands, shape into 16 balls.

Roll each ball into reserved coconut flakes.
Flatten slightly and garnish with pecan half.

* if using cooking dates instead of medjool dates, you may need to rehydrate them in water before using.
