- 1 1/2 cups, cooked, pureed beets (approx 2-3 beets)
- 1/2 tsp. vanilla extract
- 1 tsp. cinnamon
- 1 cup organic sugar (maple syrup, agave, sucanat etc.)
- 1/2 cup flax oil
- 1/2 cup unsweetened applesauce
- 3 eggs or 4 egg whites
- 1 3/4 cups whole grain flour (spelt, kamut etc.)
- 1 1/2 tsp. baking soda
- 1 tbsp. baking powder
- 1/4 tsp. salt
- 3-4 tbsp. cocoa
1. Preheat oven to 350F .
2. Line or grease a 8×10” baking pan or line 12 muffin cups.
3. Beat eggs, vanilla, oil, applesauce and beets.
4. Combine the dry ingredients and add to creamed mixture. Mix well and pour into prepared baking pan.
5. Bake 25-30 minutes or until cooked through
