Easy summer salad
- 3 cups Mung Bean Sprouts
- ( the kind used in Chinese food…..they can be found in produce section of your grocery store)
- 2 cups thinly sliced vegetables (peppers, zucchini, carrots….use a variety of vegetables and colors)
- 2 Tbsp. soy sauce or Braggs Amino Acids
- 4 Tbsp. rice vinegar or apple cider vinegar
- 1 Tbsp. sesame oil
- 2 Tbsp. hemp or flax oil
- 1 Tbs. ginger – minced
- 1 Tbs. garlic – minced
- 1/2 tsp. salt
- 1/2 tsp. agave syrup or honey
- 1 Tbsp. green onion -chopped
- Sesame seeds
Poach mung beans and vegetables for 1 – 2 minutes by putting them in rapidly boiling water, remove to strainer and cool with cold water. Drain well. Mix all vegetables and sprouts in a bowl.
Mix all dressing ingredients together and pour over sprouts . Serve Chilled
Garnish with green onion and sesame seeds.
