• 2 1/4 cups spelt flour
  • 1 tbsp. baking powder
  • Pinch of baking soda
  • 1 tsp. cinnamon
  • 1 tsp. vanilla extract
  • 3 eggs or 4 egg whites
  • 1 1/4 cups almond or rice milk
  • 1/3 cup pure maple syrup
  • 1 tbsp. flax or hemp oil
  • 1 cup dates, chopped
  • 1 cup walnuts, chopped

1. Preheat oven to 375F.

2. Line or grease muffin tin.

3. Combine dry ingredients in a medium size mixing bowl. Create a well in the centre of the dry ingredients and add liquid ingredients. Mix well, incorporating all of the dry ingredients.

4. Stir in dates and walnuts.

5. Pour into muffin cups and bake for 20 minutes or until cooked through.
