Lentils, a small but nutritionally mighty member of the legume family, are a very good source of cholesterol-lowering fiber.

  • 3/4 cup green lentils
  • 1/4 cup red lentils
  • 1 can organic mixed beans, drained & rinsed
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 1 small can diced tomatoes (and juice)
  • 4 cups vegetable broth
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. cumin
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cinnamon

In a slow cooker, add all ingredients.

Cover and let cook on low for 8-10 hours & Enjoy !
