These delicious bars are no-bake and so delicious that you won’t believe they are healthy!

BASE

1 1/4 cups walnuts, not soaked

1 cup dates, soaked and pitted

1-2 tbsp. raw cocoa powder

1 scoop protein powder ( i used Sunwarrior)

1 tsp. vanilla extract

FROSTING

1/4 cup coconut butter (not coconut oil) – at room temperature

2 tbsp. maple syrup

1 tsp. vanilla extract

2 tbsp. coconut flour

DIRECTIONS

Place walnuts in food processor and process until finely ground.

Strain dates and reserve water.

Add dates, cocoa powder, protein powder and vanilla and process until it comes together into a ball.

Press into a parchment lined loaf pan.

Prepare frosting in a small bowl by combining coconut butter, maple syrup and vanilla.  With a fork or whisk, combine all ingredients until smooth and creamy.

Add coconut flour and incorporate into frosting.

Spread over top walnut mixture and refrigerate until set.
