2 flax egg replacement (2 tbsp. ground flax simmered in 6 tbsp.water)
1 pkg. instant yeast (approx. 2 ½ tsp.)
1 tbsp. coconut sugar
1 cup warm water (around 100°F)
3 cups gluten-free flour mix
2 tsp. xanthan gum or guar gum
1 tsp. sea salt
2 tbsp. extra virgin olive oil
1 cup prepared pizza sauce
Toppings of choice (olives, peppers, onions, mushrooms, etc.)
Vegan Cheese (optional)

Prepare flax egg replacement and set aside.

In a small bowl, dissolve yeast and sugar in warm water for 5 minutes until frothy.

In a large bowl, combine flour, guar gum and salt. Make a well in the centre of the dry ingredients and add yeast mixture, flax egg and olive oil. Stir well to combine. Knead dough until all the flour has been incorporated. Rub dough with olive oil. Cover bowl and let rise 35-40 minutes.

Preheat oven to 400°F. Dust pizza pan or baking sheet with flour.

Remove dough from bowl and gently place into pizza pan. Gently roll out dough with rolling pin to 3/4” thickness.

Cover with sauce and toppings. Bake 25-30 minutes.
