Lemon Coconut Balls

These raw treats are great any time of day!

1 cup cashews, soaked for half hour or longer

1 cup shredded unsweetened coconut

2 tbsp. freshly squeezed lemon juice (about 1/2 lemon)

1/2 tsp. lemon extract

2 tbsp. RAW agave syrup or sweetener of your choice

1/4 cup unsweetened shredded coconut for garnishing

Strain cashews and reserve liquid.

Place cashes, coconut, lemon juice, lemon extract and agave syrup in food processor.

Process for about 1 minute until mixture comes together in a ball.  Add reserved liquid if needed to help mixture come together.

Shape into 16 balls and roll in shredded coconut and serve.
