Lentils, a small but nutritionally mighty member of the legume family, are a very good source of cholesterol-lowering fiber. Not only do lentils help lower cholesterol, they are of special benefit in managing blood-sugar disorders since their high fiber content prevents blood sugar levels from rising rapidly after a meal.

Prepare this before you leave for work in the morning and come home to this delicious, warm and hearty stew.

1 sweet potato, peeled and cubed

2 carrots, peeled and chopped

1 onion, chopped

2 stalks celery, chopped

¾ cup green lentils

¼ cup red lentils

1 clove garlic, minced

1 cup tomato puree

4 cups vegetable broth

⅛ tsp. cayenne pepper  (or more to taste)

½ tsp. cumin

¼ tsp. nutmeg

Place all ingredients in slow cooker.

Cover and set on low for 8-10 hours or on high for 4-6 hours.

Serves 2- 4
